This was our first experiment in creating a rum liqueur in the Dark Matter Lab. We looked at finding a new way of bringing together the established and well-loved flavour set of rum with fresh ginger, and adding tangy rhubarb into the equation.
Hands-on testing (and a fair bit of tasting) various levels of ginger and rhubarb resulted in a liqueur which balances tangy fruit with a confident spice note.
Our Rhubarb & Ginger Rum Liqueur is highly versatile in a variety of serves, from refreshing long drinks to concise sours, not to mention being downright delicious served over ice.
Essential Data: 20% ABV. 50CL
A hardy plant, native to Asia and originally cultivated as a medicinal plant. Its stalks are highly acidic, giving it a uniquely intense flavour profile.
Root ginger adds an explosive warming heat, and a touch of fresh sweetness.
