Mojito Fuego – Oli Davies
When we ran a cocktails competition in December, we had so many good suggestions from our online community, but it was Oli Davies (aka @oli_drinks on instagram) who won with his take on a Mojito Fuego. Fiery but perfectly balanced with fruit and mint, mixed with our Spiced, this cocktail was right up our street!
THE INGREDIENTS
- 50ml Dark Matter Spiced RumĀ
- 15ml Dark Matter Rhubarb & Ginger Rum Liqueur
- 2 tbsp brown sugar
- Fever-Tree Light Ginger Ale to top up
- crushed ice
- fresh mint & pineapple
- burnt lime wheel, fresh mint & fresh pineapple leaf to garnish
THE METHOD
Muddle 2-3 chunks fresh pineapple, 4-5 picked mint leaves with the brown sugar.
Add the Dark Matter Spiced Rum and Rhubarb Liqueur and stir.
Pour in ginger ale, add crushed ice, stir, and top up again with ginger ale.
Garnish with mint, pineapple leaf and burnt lime wheel.
